Royal Icing
We had fun with this one! Before having our own tearoom I was using this icing to make snowflakes for Faye of Faye's Fancies. We hung these on her tree in the window at Christmas. We even made an angel topper for the tree with it. It is sticky with hard consistency that is perfect for sculpting, icing gingerbread men and is excellent for gluing gingerbread houses. There have been many decorations and gingerbread decorated over the years using this old-time favourite.
- 3 egg whites at room temperature
- 4 cups sifted icing sugar
- 1/2 tsp cream of tartar
- Beat all ingredients together at high speed for 5 to 7 minutes
To regulate icing consistency add more (or use less) milk.
